Grape varieties: Syrah, Merlot, Cabernet Sauvignon, Tintilla de Rota and Petit Verdot Elaboration: natural sparkling wine made by the Ancestral method, PET-NAT wine. View: Live bubble without being aggressive, which forms the crown and creates very faint columns in the glass, with a deep intense garnet color, presenting a good tear in the glass. Aroma: Clean, flawless nose, intense, with sweet nuances, gummy candy, liquorice, candied fruit, and many pastry and confectionery nuances. Mouth: It has a dry mouth, a high acidity, it preserves that greenness of young wines but it is very elegant. It maintains a good acidity from the elegant entry on the palate to its very well balanced exit. Balsamic nuances appear, touches of eucalyptus, and the tannins are slightly astringent without saturating the palate. Pairing: Pure chocolate, game meat, stewed game, wild boar and venison, fig jam, roasted fruit such as pear or apple.
