From our own cellar. Ear Apiary. Community of Madrid. Tasting sheet ELABORATION AND VINIFICATION Harvested by hand at the exact point of its maturation. Destemmed at the table after strict selection. Fermentation at 22 ºC degrees of temperature with very energetic pumping over and dry devatting. BREEDING 12 months in new French oak barrels (Allier) of 300 liters. The rest in the bottle, about 4 months. VISUAL Dark red color of ripe cherry with light rims of high layer that anticipate its fine and fruity flavor. OLFACTIVE Ripe red fruit well assembled with the aromas typical of the aging process provided by the wood: balsamic aromas such as vanilla, nuts, roasted notes and toasted aromas like tobacco. TASTE Balanced and complex. Exact concentration of well-balanced fruit with very lively acidity and soft and pleasant tannins. A long and aromatic breadth; a wine that invites you to continue drinking, due to its long finish. PAIRING It can accompany meat and fish stews. offal Red and game meats, consistent roasts, pork and lamb. Rice with diversity of seafood and vegetables. All kinds of cheeses and sausages, vegetable grills. Ideal to drink by the glass as an aperitif. Due to its strict elaboration, Ingenia “Selección” becomes a unique wine that acquires its character from the wine tradition of the Vega de Madrid. And it is added to the emerging wines that have surprised since their appearance.
