
This creamy and complex white wine, produced by Deep Rooted Wines, is a blend of three distinct plots of Sauvignon Blanc, grown organically or regeneratively, from the cool climate region of Walker Bay. Vinification and aging: The grapes from two of the plots are pressed in whole bunches while those from the third are crushed and left to macerate with the skins for 6 hours before pressing. Fermentation is carried out naturally in old 500 L French oak barrels, then the wine is aged on raw lees for 10 months. We obtain a Sauvignon Blanc with an atypical and gastronomic profile with incredible length. Tasting notes: – Appearance: Intense straw yellow color. –Nose: Aromas of white peach, apple, green pear and flowers, accompanied by notes of dried herbs. –Palate: Beautiful fruity expression with lively acidity and a saline finish. This wine has a creamy texture thanks to its passage on lees.
