
This fresh and fruity white wine, produced by Iona, comes from the Highlands, a unique sub-region of Elgin located on a mountain plateau 420 meters above sea level, overlooking the Atlantic Ocean. It is one of the freshest terroirs in South Africa. Vinification and aging: The Sauvignon Blanc grapes are fermented at 14-16°C, then aged on raw lees for 5 months and stirred regularly to enhance the creaminess. The 10% Sémillon is fermented naturally in 500 L French oak barrels to perfect the complexity of the wine. Tasting notes: – Appearance: Golden yellow color. –Nose: Beautiful aromatic expression with concentrated aromas of grapefruit, lime, white flowers, supported by notes of minerality. –Palate: On the palate, the acidity gives the wine a lot of dynamism and tension.It is vibrant, elegant, balanced and delicate, with a mineral, complex and stony finish.
