Semi-dry Chouchen

Chouchen semi-dry Breton. Drink as an aperitif, ideally quite chilled. Aged for 10 months in oak barrels, it is made simply with summer honey, water and apple juice from local producers. The ferments from the apples are sufficient to start the fermentation and that is why there is no added yeast. Controlling aging by underdrawing the chouchen leads to completely finished fermentation. On the nose, the scent of honey will immediately take over. We will expect a fairly sweet alcohol, as generally with chouchen, and yet, we will have a nice lightness. In the mouth, we will have something quite structured with a nice balance. In the finish, we will find the aromas of honey. It can be kept for several months or even several years in bottle, ideally in a cellar without light. Our chouchen reaches 14 degrees of alcohol with 27g/liter of sugar.
