ORGANIC Red WINE - SAINT CHINIAN 2019 - Variations

VINEYARD Towards organic conversion since 2012. Respect for the vines is one of our priorities. Production is maintained at 35hl/ha. VINIFICATION The harvest is mechanical. The grape varieties are vinified separately. As soon as it is in the cellar, the harvest is destemmed and follows a traditional vinification process for twenty days during this punching down and pumping over promote the extraction of the aromas that qualify our terroir. BREEDING AND CONDITIONING It is only after the first winter that we determine the vats that will make up the blend, which will spend the next 12 months in oak barrels. It will then go into vats to find its balance until the following autumn. The structure of this wine offers a possibility of keeping for 3 to 5 years. Vintage 2019 Ruby hued robe.
