The Exception cuvée is the estate's most exclusive production. All its know-how is concentrated in this bottle, the fruit of a selection of the finest Syrah which, after a long aging in barrels, expresses itself on aromas of cooked and jammy black fruits. The tannins, although numerous, have been softened by aging in barrels and the pleasure brought to the tasting is matched only by its aging potential: close to infinity. Assembly : 95% Syrah 5% Garnacha Average age of the vines: 35 years Vinification: Dandruff maceration 3 weeks. Breeding : 26 months in barrels, 1/3 new wood Tasting note: Soft attack, volume and breadth, melted woodiness, finish tinged with slightly liquorice notes. Food-wine pairing: Game, dishes in sauce, pasta with truffles Custody possible: Great aging potential, beyond 15 years In a few words : Rich, powerful wine with a robust structure.
