Growing naturally in wastelands and gardens, nettle is one of the best-known plants, yet little used! Its use dates back to ancient times, and it is held in great esteem in all traditions. Incorporate dried nettle as desired into all your hot or cold preparations, mix in salads and vinaigrettes, salty white cheeses, pasta, rice, soups, etc. Its taste is particularly suited to soups and broths. You can also brown dried nettle in olive oil with finely chopped garlic and ginger to make a delicious condiment (best when you salt with a few drops of soy sauce or with salt on the aromatics) to be enjoyed as an aperitif or with all dishes. Rehydrate if necessary depending on use.
