Ground nutmeg

Ground nutmeg is a spice recognizable by its intense aroma, combining warm, woody and slightly lemony notes. To taste, it offers an experience that is both harsh and sweet, spicy, warm and slightly sweet.  Nutmeg comes from the seed of the nutmeg tree, a tropical tree grown mainly in Indonesia, the West Indies and Grenada. The nutmeg fruit contains several components, including the fleshy part, the mace, which is the aril of the nut, and the nutmeg itself. In the 16th century, the Dutch broke the Arab monopoly on nutmeg, and slaves on board their ships consumed nutmeg for psychotropic and sedative purposes.  Ground nutmeg is known for its health benefits. It is carminative, stimulating, and beneficial for the digestive system, relieving digestive problems such as flatulence, intestinal spasms, and colic. It has anti-rheumatic and analgesic properties, reducing joint pain. Nutmeg also acts as a tonic to combat temporary fatigue. However, at high doses (above 5 g) it can have psychotropic effects, and at even higher doses (above 10 g) it can cause hallucinogenic effects.  Ground nutmeg can be used in a variety of savory and sweet dishes. It enhances the taste of béchamel sauce, potatoes (like gratin dauphinois or mash), and savory tarts like quiche Lorraine. In desserts, it goes perfectly with autumn and winter fruits, such as apples, pears, quinces, and oranges. It adds a delicious note to gingerbread and fruit cakes.  To preserve the flavor of ground nutmeg, it is recommended to add it at the end of cooking in small quantities, because a pinch is enough to reveal its distinct aromas. Ground nutmeg is a versatile spice that can add a special touch to a wide variety of dishes, whether savory or sweet, while providing health benefits.
