POICAMOLE, peas, no avocado! ORGANIC - 200G

Avocado is very good. The concern is that very little is produced in France, that it comes from the other side of the world, that its cultivation requires up to 100,000 liters of water per day and per hectare and that in addition , it does not keep! That's a lot of reasons to want to reinvent the French Guacamole recipe! We keep the markers of the guacamole recipe (lime, coriander, onion, tomato tip) and we replace the avocado with peas! And the result is really, really, really, really good. Our friend Stéphane, artisan-producer in Languedoc, had the idea of keeping some of the zest of the lime. This brings a little bitterness which rebalances the sweetness of the peas.
