The durum wheat flour of the "Perciasacchi" wholemeal type 2 variety, also called "Long Spelled", from the Grano Madre mill is a true treasure originating from the Sicilian lands. The ancient wheat "Perciasacchi" owes its name to the pointed shape of the ear that pierced the jute bags in which it was contained. With characteristics not very dissimilar to Khorasan or Kamut wheat, with the particularity of being an indigenous Sicilian wheat, the flour obtained from it has a characteristic yellow color because it is rich in carotenoids. Natural stone ground, this flour is perfect for bread making and allows you to obtain doughs that are easy to work with, with medium rising times. The products produced will have an exceptionally intense color and aroma.
