In the Sahel (coastal region of Tunisia), the "Chemlali" variety olives are picked in the middle of the season (December) at the end of their color change. This produces the famous ripe fruitiness. Characterized by sweetness on the palate and olfactory sensations evoking almonds, dried fruits and avocado. On average, 5 to 6 kg of olives are needed to obtain 1 liter of ripe fruity olive oil.
