Our extra virgin olive oil is produced from endemic variety olives (Chemlali) that we harvest exclusively by hand in an artisanal manner on our fifth generation family property in Tunisia. This limited edition bottle is unfiltered and vintage. Integrated bottle box. It’s the one that comes straight from the mill and is made from the first green olives of the season. Usually, between extraction at the mill and bottling, there is a filtration process which removes any residual olive particles and makes the oil bright, transparent and more stable. This is not filtered and is therefore characterized by a deep, opaque green color and a cloudier appearance, a bit like freshly squeezed orange juice with its pulp or a natural wine! -Local olive oil Extra virgin olive oil from Tunisia, single origin, from the Ben Romdane family property in Mahdia, and from traditional and organic cultivation. -Tasting notes Expressive aromas. Dense green fruitiness, vegetal notes of artichoke and almond with a hint of bitterness and a length on the palate which testifies to its premium quality. Acidity level: 0.2% - Harvesting producer & Family property Our olives are exclusively selected by producer Sarah Ben Romdane on her family's property in Tunisia. It is in the Mahdia region that his family has been cultivating the local variety, Chemlali, for five generations. The harvest is artisanal and 100% manual and the olives are cold extracted the same day. -Organic & Ethical We reconnect with our ancestral family know-how, promote the rich Tunisian terroir and its history and empower the rural communities who protect it through short circuit distribution. More than 50 women are present on the family property during the harvest, using know-how passed down from generation to generation. We are committed to ensuring that these traditions are not lost.
