Hilopites

In accordance with the traditional recipe, our little pastas Hilopites are prepared in an artisanal way from semolina durum wheat, fresh eggs and goat's milk, products ultra fresh all carefully sourced from small farms local authorities in the Arcadia region. Goat's milk for example is collected just 1km from the processing site. It is collected the same day of production, then heated at 70°C for 14 seconds to be pasteurized then integrated to the preparation. The Hilopites are then dried naturally for 22 to 25 hours.
