KHLA green pepper comes from the first harvest: if it is dried in the sun, it becomes black pepper. Once harvested, fresh green pepper can only be kept for a few days, not more than a week because it oxidizes quickly. Our producer had the idea of using the thousand-year-old method of salt preservation: mixed with Kampot salt (the other ancestral culture of Kampot), the fresh pepper retains all its aromas and taste subtlety.
