Established for thousands of years in the Mediterranean basin, the olive tree produces its fruits in the heart of winter, from November to February. The "tench", a variety specific to Nyons and the surrounding region, benefits from a controlled designation of origin (A.O.P.) and is picked at full maturity, when it is black and slightly wrinkled by the first frosts. It is this typical, sweet and very fragrant black olive that we offer in a glass jar, to be kept cool in your refrigerator for maximum preservation. Depending on your taste, you can even add a little garlic or a pinch of Provencal herbs. The Nyons AOP black olive is a real delicacy as an aperitif and can enhance your salads, pizzas, or any other kind of recipe.
