The black olive from Nyons, also called Tanche, is a variety valued as AOP, Protected Designation of Origin. It is harvested in December and January in the Baronnies region around Nyons. The producers deliver it to Brin d’Olivier and we then ensure its processing, this is the olive confectionery activity. Its aroma is reminiscent of hazelnuts and apples. Characteristics: Purplish-brown to black olive, Low bitterness, Aromas of hay and dried fruits. After opening, store in the refrigerator and consume quickly.
