Green tea - Shan de Lao Cai ／ Vietnam

This cru, cultivated by minorities, comes from the mountains of northern Vietnam in the Lao Cai region. Shan tea is made from ancestral large-leaf tea plants that can also be found in Yunnan, a border province of China. The liquor is characterized by a slight astringency and a sappy facet which becomes more pronounced with age. It can be steeped until it runs out.
