SANERAC tomme du Cantal more than 6 months of maturing

A Cantal tomme with an authentic taste.   Small artisanal cow’s tomme, weighing around 700 g, made in the Cantal, matured for more than 6 months in an underground cellar.     Its thin, whitish rind contains a pretty supple ivory-colored paste.   After six months of maturation, forest and licorice notes invade your palate.     Enjoyed as an aperitif in pieces, you can cut it vertically.                                        This type of cutting also allows you to slip it into small pans for a raclette or to enjoy it at the end of a meal.  If you cut it in the horizontal direction, removing the first slice where the rind is, you have a cylindrical surface from which you can easily make shavings with a truffle grater for example, shavings which will perfectly accompany a salad, a gratin or any other dish of your choice… Sanérac matured for more than 6 months: aromas of woody flavors, roasted cocoa and liquorice.     This tomme can be kept for four months between 4 and 8°C. 98% milk, 1.8% salt, 0.08% calcium chloride, 0.02% rennet and lactic ferments
