12.5% Vol Alc APPELLATION AOP Burgundy Gamay TERROIR Region: Beaujolais Varietal: Gamay Noir Vineyard: granite soils – continental climate VINIFICATION AND AGING Traditional Beaujolais method: semi-carbonic maceration. The wine is then aged in stainless steel vats. After fermentation, part of the wine is placed in oak barrels for aging for about 9 months. TASTING NOTES Intense ruby color with light purplish reflections. The nose reveals concentrated aromas of red fruits, enhanced by notes of vanilla and peony. The attack on the palate is round and presents silky tannins. Nice balance and sensation of greediness. FOOD AND WINE PAIRINGS Serve at around 16°C with black pudding and mashed potatoes, a pork cheek stew in red wine or sautéed rabbit with onions.
