But how do we go from fresh olives to the golden oil that enhances our dishes? Here are the main stages of the Tagaris olive oil manufacturing process. Harvesting olives is a matter of patience and respect for the tree. Each year, careful pruning of the olive trees allows new branches to bear fruit for the following season. This artisanal method preserves the vitality of the trees and guarantees healthy, flavorful olives. Harvesting is done exclusively by hand, from the end of October, depending on ideal weather conditions, to harvest the fruit at optimal maturity without damaging it. This extreme care ensures intact fruit, the key to an olive oil with a rich taste, delicate aroma and low natural acidity. As soon as they are harvested, the olives are immediately transported to the Tagaris family mill, where they are pressed within 24 hours, thus guaranteeing freshness and the preservation of all their beneficial substances. Extraction is carried out cold (max 27°C) using cutting-edge technology: a 2-phase system which does not require the addition of water. This ecological process produces pure olive oil, a real fruit juice, concentrated in polyphenols, vitamins and aromas, while respecting the environment. Result: an oil with a deep, shiny green color, with a unique taste and nutritional quality.
