Spelled is the ancestor of wheat, as it was once consumed by the Gauls and of which we find traces dating back eleven thousand years ago. It is a cereal that does not require any fertilizer, requires very little water and is very nutritionally rich. Rich in vitamins and minerals, wholemeal spelled flour produces bread that does not crumble. Replaces wheat flour advantageously, because it contains less gluten, can be used in the same way. 

Waffle dough: 500g flour, 2 eggs, 1 sachet of baker's yeast, 2 spoons of honey, 20g of walnuts, 40g of currants, 20g of hazelnuts, 75ml of sunflower oil, 25ml of walnut oil, 200ml of vanilla rice milk. 

Mix and leave to rest for 1h30. 

Cook in a waffle iron.
