Indian white basmati rice. A unique, very fragrant rice, ideal for accompanying curries. Bring 2 bowls of water to a boil. Pour 1 bowl of rice, 2 cinnamon sticks, 10 whole cardamoms, salt and 100gr of butter. Boil for 2 minutes and then reduce the heat to low. Cook for 10 minutes, turn off the heat and leave for another 10 minutes with the lid on so that the rice swells well. Accompanies Indian dishes. Kashmeer Shing - A Passionate Rice Farmer? Kashmeer Shing is the rice farmer of the Fairtrade "Khaddar" project. He lives with his five brothers and their families on a property in northern India. There, in the Luxar region at the foot of the Himalayas, he plants 2.5 hectares of basmati rice with his three sons. The Fairtrade principle? The Fairtrade principle is simple: Rice-growing families like that of Kashmeer Shing receive a minimum price for their rice that has been contractually agreed. This price is guaranteed above the average of the world market price. Thus the people on the spot can save money, take care of their needs and have access to a minimum level of education and health care. Kashmeer Shing, like other rice farming families, is not only Fairtrade certified but also certified in biodynamic farming. Demeter agriculture is based on the biodynamic criteria of the year 1928 according to the anthroposophist Rudolf Steiner, which are beneficial for the quality of the products as well as for the environment. Improvements for the people on site? With the additional income from fair trade, for example, a bridge was built. Now Kashmeer Shing no longer has to walk across a canal in water up to his stomach, with his rice crop on his head. Instead, he can use an ox cart to cross the bridge. A basic medical care structure, a better school system and a telephone network are also planned. The narrow streets between the village and the fields will also be reinforced, with the strong monsoons they quickly turn into a mud desert.
