
Amaranth, native to Latin America, is related to cereals and is eaten as such. It is rich in protein and does not contain gluten. Pour 300gr of amaranth into 1 l. of boiling water. Cook covered for 5 minutes with 1 stick of vanilla, 1 pinch of salt, 1 stick of cinnamon. Leave to swell for 20 minutes over very low heat on a heat-diffusing plate, the consistency becomes creamy. Add 75g of melted butter, 1/2 squeezed lemon + grated zest, 100g of honey, raisins. Desserts to be served cold.
