Lentils are very interesting legumes. They are very rich in vegetable proteins and fiber, as well as minerals and trace elements (phosphorus, iron, manganese, copper, folate, zinc). They are more digestible than other legumes and have a shorter cooking time. Rich in lysine, they complement cereals, they improve the balance of a meal based on a cereal and vegetables. These are peeled lentils (hence their color) which cook very quickly. Dhal: Boil a liter of water with 1 clove of crushed garlic, 1 teaspoon of cumin and sweet paprika, 50g of tomato paste, 3 chopped fresh tomatoes, 2 sliced onions. Add 300g of lentils and let boil for 20 minutes over low heat. Season with salt and garnish with chopped coriander.
