Orecchiette are a type of pasta typical of the Puglia region, whose shape is approximately that of small ears, from which the name derives. Their size is, on average, about 3/4 of a thumb, and they appear as a small white dome, with the center thinner than the edge and with a rough surface. For wholemeal orecchiette, only organic wholemeal semolina is used, a product rich in fiber and highly digestible.
