Smoky Green Tomato Salsa

At the end of every harvest season there are tomatoes left on the vine that did not get enough sunlight to ripen. These small unripe tomatoes are firm, tart, and packed with flavor. This green tomato salsa is made with tomatoes that have been charred over hot coals alongside onions and fermented jalapenos. The result is a smokey, slightly spicy, and vibrant salsa that works perfectly in tacos or with tortilla chips. Our tip: mix a few spoons with cubed avocado, lime juice, and chopped cilantro for a simple and delicious guacamole. Ingredients.
