Saffron is known to be the most expensive spice in the world. We worked it in the style of Milanese risottos with squash, white wine and parmesan. A delight! As always at Sauces Papillon, a short list of ingredients without additives, low-temperature cooking with the use of sous-vide, fresh, organic and ultra-locally sourced raw materials (85% of French supplies, at rare occasions Italy and Greece for olive oil) Pumpkin squash (31.5%), Fresh cream (21.6%), Whole milk (13.98%), Onions (11.3%), White wine (10.5%), Parmesan (7.2% ), Sunflower oil (2.9%), Salt (0.8%), Pepper (0.2%), Saffron (0.019%)
