
Señorío de la Tautila Rosado is made with Airén grapes from the vineyards of La Mancha, where it ferments, resulting in a high-quality wine that is dealcoholized just before bottling. This allows its organoleptic characteristics to be preserved, leaving only the alcoholic and caloric content of this rosé with generous fruit and floral expression and great freshness. This is made with the same grape as the red but it is kept in contact with the skin for less time. Señorío de la Tautila Tempranillo has been produced through a system known as low-temperature vacuum distillation, the most traditional and least aggressive of the dealcoholization methods. Using this sophisticated method, the wine previously fermented in stainless steel tanks is processed without temperature or pressure attacks and always under strictly controlled conditions. Thanks to this "deconstruction", the risk of loss of aromatic components of the wine is minimized.
