TONKA BEANS

The Tonka bean (or coumarou) is the fruit of a gigantic Brazilian tree that can live up to a thousand years. Its complex flavor is a mix between vanilla, caramel, musk and almond. It gives off a certain bitterness, so it should be used sparingly. In addition, it is important to note that the aromas of the tonka bean are reinforced as they cool. To flavor your dishes, Tonka bean can be used as an infusion or grated. Better known in sweet dishes, the Tonka bean goes perfectly with chocolate in all its forms and enhances crème brûlée, custard or whipped cream.
