2021 Salty White Amphora THE HERMIT RAM - Natural Wine, Orange Wine, North Canterbury, New Zealand. Theo Coles made his first natural wine in 2012. Back then, Gareth Renowden asked him to help him make an excellent natural wine from his Pinot Noir grapes. Today the range of wines has expanded. Generally, the grapes come from tiny vineyards in the Canterbury region. Every wine has its own story to tell. The vines are grown naturally and the wines are made with minimal additives. Old techniques are used. They are wines of depth, complexity, individuality and, above all, with the best drinkability. Salty White 2021 consists mainly of Sauvignon Blanc and some Müller-Thurgau. The grapes are hand-picked and sorted, partly pressed directly, partly fermented on skins and partly fermented as a "whole bunch" (all with local yeasts). The aging process takes place in a variety of barrels (stainless steel, Tinajas amphorae and old wooden barrels). The wine is then blended unfiltered and unfined and bottled. Just a hint of SO2 (sulphur) was added. The Hermit Ram Salty White tastes salty, floral and structured. "Salty White is my ode to the New Zealand coast, my attempt to marry both the salty and floral elements of our land".
