2021 Sauvignon Blanc Zealandia - The Hermit Ram THE HERMIT RAM - Natural Wine, White Wine, North Canterbury, New Zealand. It all started in 2002 when, on his travels, Theo Coles stumbled across an image of a large gnarled looking ram standing in a field. He was defiant, a little wild, had an old world charm and was very New Zealand. He bought the picture. 10 years later he met Gareth Renowden, owner of Limestone Hills Vineyard in the Waipara Gorge. He wanted help making wine from 1000 Pinot Noir vines that thrived on beautiful, active limestone soil. In 2012, Theo turned it into the first Pinot Noir natural wine, without any additives, which, as it matured, had an exciting blend of hearty fruit flavors and sparkling salty acidity. Theo thought about what to call the wine and saw the picture with the ram. This is how The Hermit Ram was born. The grapes come from two (both gravel soil terroir) different organic vineyards in North Canterbury. The grapes are destemmed and fermented on the skins with local yeast for 6 weeks. The wine is then pressed from the skins and aged for 8 months for the 2020 and 6 months for the Zealandia 2021 in a variety of stainless steel tanks and Spanish amphora (tinajas). Unfiltered, unembellished. The Hermit Ram Skin Fermented and Sauvignon Blanc Zealandia are characterized by herbal, salty flavors of yellow plum and elderberry.
