2021 Field Blend Amphora - The Hermit Ram THE HERMIT RAM - Natural Wine, Red Wine, North Canterbury, New Zealand. It all started in 2002 when, on his travels, Theo Coles stumbled across an image of a large gnarled looking ram standing in a field. He was defiant, a little wild, had an old world charm and was very New Zealand. He bought the picture. 10 years later he met Gareth Renowden, owner of Limestone Hills Vineyard in the Waipara Gorge. He wanted help making wine from 1000 Pinot Noir vines that thrived on beautiful, active limestone soil. In 2012, Theo turned it into the first Pinot Noir natural wine, without any additives, which, as it matured, had an exciting blend of hearty fruit flavors and sparkling salty acidity. Theo thought about what to call the wine and saw the picture with the ram. This is how The Hermit Ram was born. Field Blend 2021 comes from one of the oldest vineyards in North Canterbury (45 years old). Field Blend 2021 is a blend of Riesling, Pinot Noir, Chardonnay, Cabernet Sauvignon and Gewürztraminer. The proportion of the individual varieties varies from vintage to vintage, depending on the harvest volume. All varieties are harvested together (when the Riesling is ripe), destemmed together and co-fermented on skins with native yeasts. The wine then rests on the skins for six weeks before going into Spanish Amphora comes to aging. Finally, it is bottled unfined and unfiltered. Field Blend 2021 tastes wonderfully earthy, spicy and radiantly tasty and goes perfectly with grilled meat, pulled pork burgers and cheese and baguette, slightly chilled.
