2020 Sauvignon Blanc Skin Fermented -The Hermit Ram THE HERMIT RAM - Natural Wine, White Wine, North Canterbury, New Zealand It all started in 2002 when, on his travels, Theo Coles stumbled across an image of a large gnarled looking ram standing in a field. He was defiant, a little wild, had an old world charm and was very New Zealand. He bought the picture. 10 years later he met Gareth Renowden, owner of Limestone Hills Vineyard in the Waipara Gorge. He wanted help making wine from 1000 Pinot Noir vines that thrived on beautiful, active limestone soil. In 2012, Theo turned it into the first Pinot Noir natural wine, without any additives, which, as it matured, had an exciting taste mixture of hearty fruit aromas and sparkling salty acidity. Theo thought about what to call the wine and saw the picture with the ram. This is how The Hermit Ram was born. The grapes come from two different organic vineyards, both with gravel soil terroir. The grapes are destemmed and fermented on the skins with local yeast for 6 weeks. The wine is then pressed from the skins and aged for 8 months in a variety of stainless steel tanks and Spanish amphora (tinajas). Unfiltered, unfined and bottled with minimal sulfur content. Herbal, salty and the taste of yellow plums and elderberry characterize The Hermit Ram Skin Fermented. This is not your average Sauvignon Blanc but wonderfully different and wonderfully drinkable. contains sulphites Drinking temperature: 8-11°C store at 12-14°C Alcohol: 12.5% Bottles don't have a sticker from US on them!
