The Toms Collins is a fresh and light cocktail, with in the end, the bouquet of gin. Many bartenders in the 19th century were attributed this creation, however no one really knows its origin. What is known is that the name "Tom" comes from the use of Old Tom gin in the original cocktail recipe. During the heat wave in New York in 1936, this cocktail simply became the "summer cocktail".
