In Rothenklempenow, Western Pomerania, we use the traditional method of nixtamlization (boiling in water with calcium) to produce the best tortillas and tostada chips far and wide - small, round and square. It starts in the fields right next to the factory, where our friends of organic soil grow the finest maize. The corn is boiled, ground to masa (dough) in a volcanic stone mill, shaped and freshly baked daily on heated iron plates.

Nixtamal is the only method we use to process our corn. It's better for your tongue and your whole body. Nixtamal vs. conventional masa flour is like sourdough vs. industrial toast. This results in the most authentic tortillas and tostadas for you and us.
