annatto seeds

Composition: Annatto Seeds. The natives of South America and the Caribbean islands have always used it as a pigment for their body paints or as an aromatic. It is widely used as a food coloring (European code E160b). Some cheeses such as the Avesnes dumpling, the mimolette, the cheddar, the edam, the Rouy or the Red Leicester, owe their orange color to it, as do the Chamonix orange biscuits. The rind of certain livarots and reblochons is also washed with achiote. Traditionally, it is also used to dye haddock fillets. It is also one of the ingredients of recado rojo, a Mexican hot sauce. We think we don't know this spice but in reality it is present in many products that we consume... "annatto" sounds better than E160b doesn't it?
