Halfway between fruit and spice, the tonka bean is the dried seed of a tropical tree that only grows in South America. Its scent is both unique and very evocative of flavors that we know well: almond, caramel, cut hay, vanilla... Very versatile, this little wonder can be used both raw and macerated, and is suitable for sweet cooking (custards, creams, cakes, etc.) but also savory dishes (salads, white meats, vegetables, etc.) How to use it ?
