Pâté with a dense, grainy texture, deep red in colour and with some small, recognizable fragments of sunflower seeds. Its flavour recalls a symbiosis of “sobrassadas” from the region of La Marina or the Balearic Islands, combined with honey, creating a play of sweet and savoury, of tremendous intensity. Its scent is characteristic of “sobrassada”, although it allows a glimpse of the particular smell of the date. The sourness, salty and fermented flavour of Japanese miso is dominated by the sweetness of the date, which also provides a creamier and smoother texture. Once opened, shelf life is 7 days, if refrigerated.
