HVE 3 Pure Sauvignon Blanc, harvested and sorted by hand. Pre-fermentation pellicular maceration of approx. 10 hours. to extract the natural flavors present in the ripe and healthy skin. Light pressing and cold settling to clarify the wine without So2 and remove a max. plant sediments. Increase in temp. for the native yeasts to begin fermentation. Then, the wine will be aged on fine lees for 6 months, this will give a rich and supple fresh wine, balanced with aromatic complexity. It is not an industrial wine, it is a wine produced for wine lovers.
