Riesling Lagenwein 2021

With yield reduction, pre-harvest, hand harvest and whole grape pressing, we brought the aromatics of the 33-year-old vineyard in the Siefersheimer Heerkretz already concentrated in the must before we then fermented it spontaneously in barrique (fourth occupancy) and compressed it even further. In the cool fall and winter of 2021, the Riesling took 5 months to ferment there and form an extraordinary cold fermentation aroma. The fermentation naturally stopped at a very gentle level of residual sugar, which allowed for another 8 months of yeast aging.The discreet note of wood now underlines the powerful fruit as well as the finely integrated acidity, but without taking centre stage. The high extract and the enormous juiciness as well as the finely nuanced aromas from the spontaneous fermentation clearly stand out in this Riesling. A multi-layered aroma of stone fruits, but also discreet citrus and a slightly hinting minerality. In the mouth, very rich, slightly sweet but above all juicy, spicy and mineral with a great length.Cultivation: – Reducing pruning 7 eyes/m² – Hand defoliation of the grape zone – Hand harvesting of the first and second bunches at 14 °C – Yield per hectare: 4,000 l/haVinification: – 2 hours standing on the winepress – Whole grape pressing – 5 months of spontaneous fermentation in barriques at 17°C / 4th racking – 5 months on the full lees, 3 months on the fine lees
