EL MANZANO – SL34 The coffee comes from Emilio’s flagship farm, El Manzano which is planted with 90% red bourbon. The Beneficio is installed directly on the farm, which allows ultra-rapid processing of the cherries to maintain all their freshness. Emilio concocted this micro batch with the Kenyan SL 34 variety. This variety was identified in Kenya in the 1930s because it had good cup quality and was drought resistant. Emilio has a varietal garden on his farm, which allows him to experiment and introduce new varieties like SL 28, SL 34, Geisha and Pacamara. Emilio isolated this micro batch of SL 34 prepared in honey then dried on patios. Owner of Cuatro M, Emilio Lopez is a producer passionate about his profession, always seeking to achieve perfection, both on his farm and in the cup! He defines his way of working as outside the traditional, breaking preconceived ideas. Cuatro M produces, processes and exports its coffees, but also coffees from neighboring farms. Since 2001, Emilio has managed the Cuatro M company, which has a long coffee tradition. Indeed, Emilio is the sixth generation of coffee farmers in the family. By taking over the management of the family farms, Emilio wanted above all to create a new and unique business in El Salvador. In 2005, Emilio and his team installed the processing plant (theprofito) on the El Manzano farm. Today, with one of the finest production tools in Central America, he is able to transform his coffees via different processing routes and processes, with great precision and always with the same objective: achieving perfection! His key words are quality, consistency and innovation and we assure you that we are never disappointed by the quality of Emilio’s coffees! The introduction of new varieties is a long-term task. Emilio must plant two trees in order to obtain a mini harvest after 2 years. He can then evaluate the adaptation of this variety to his terroir as well as roast his mini-production and assess the quality by the cup. If these 2 tests are conclusive, the variety is introduced on plots of 1 to 4 hectares. It takes 5 to 6 years before a sufficiently large batch can be exported. In the specific case of the SL 34, Emilio is very satisfied with the cup result, which he considers to be one of his greatest successes. Despite the fact that the SL is a somewhat temperamental tree that requires a lot of maintenance and love.
