
One of the essential flavors of Provence is olive oil flavored with lavender. Known for its captivating color, lavender will give a pronounced, fresh and harsh taste, not without also recalling rosemary but also vanilla, camphor and bergamot. We particularly like it for dessert. This oil is ideal on your meats: rack of lamb, beef skewer with soy, duck breast with honey. The freshness of the lavender will pair nicely with a back of roasted cod, a Provencal focaccia or even a salad accompanied by warm goat cheese toast. Also consider using it in your desserts: a fine apricot tart, roasted Mirabelle plums, vanilla ice cream or strawberry salad.
