Calissons are a typical confectionery from the South of France – made from a thin paste of candied melon, almonds, topped with royal icing. It is the specialty of Aix-en-Provence, the city where the Aix&terra brand originated. Apricots, when ripe and juicy, make a traditional jam if used alone. Combined with calissons, the jam takes on a new dimension of unique flavors!
