Amaranth, botanically known as Amaranthus, is a tall plant with broad green leaves and bright gold, purple, or red flowers. There are about 60 species of amaranth, but only three are grown for their edible seeds. Amaranth can be used as a thickener for soups, stews, and sauces. It is most commonly used as an ingredient in bread, granola, breakfast cereals, crackers, muffins, and pancakes. Amaranth can be soaked for about seven hours before cooking. Boil for about half an hour in the ratio of 1 cup of amaranth to 2 or 3 cups of water, milk, or broth.
