All our coffees are pure Arabica specialty coffees. Their traceability allows in particular the control of their quality and their taste excellence but also to preserve both the environment and the producer, by ensuring the latter a decent remuneration. It is from this particularity that the name of the project draws its origin, since “Fábrica” comes from “Cloud factory”. This coffee is part of organic production and is produced from old varieties such as caturra, castillo and colombia, a very rare variety today. This coffee is produced in two indigenous coffee grower cooperatives by more than 240 families from the NASA WE'SX community on both terroirs. They each own around 2 to 4 hectares of protected land where there are more than 6,000 trees per hectare. The terroir of Planadas: Planadas is a municipality located in the South of the department of Tolima, in the South-Central part of the country, about 8 hours by road from Bogota, the capital. This demonstrates the isolation and difficult access to the region. This has a historical explanation since the region was the place where the FARC started the Guerrilla War and this place was considered for decades by the government as isolated and conflictual. Fortunately, after the peace agreement, coffee was a vector of renewal in the region. The city was able to grow and show its strength and the region is now known as one of the most important high quality coffee producing areas in Colombia. The volume produced attracts traders and roasters from all over the world. The Fabricà project: The terroir of Gaitana, in Colombia, is a veritable "cloud factory" with a relative humidity of almost 95%. It is one of the wettest places in the country. These conditions force coffee producers in the Nasa We'SX community to sell their coffee while it is still wet. This has an impact on the quality of the coffee produced, and therefore on the income of producers. The Fabrica project consists of supplying 2 mechanical silos for drying 4,000 kg of wet parchment (2,000 kg of dry parchment). Each association, Asocanafi and Ascisp, will receive a silo. As part of the project, Belco is helping to install the silos and provide training for their proper use. The main objective of the Fabrica project is to improve the quality of organic coffee produced by members of the ASCISP and ASOCANAFI associations, thanks to a standardized drying process in a mechanical silo. They want to develop the natural process to reduce water consumption and have a positive impact on the environment. As a reminder, Belco asks its partners for a maximum humidity level of 11.5%. The standard is 12.5%.
