Country: El Salvador Region: Sonsonate Municipality: Los Naranjos Farm / washing station: Finca Los Naranjos Varieties: Bourbon Treatment process: Honey Altitude: 1,450m Harvest period: November - March Tasting notes: Vine peach, orange, morello cherry.   SCA score: 86/100 Level of complexity: High Acidity: High Body/power: Balanced NOT.m - Terroir Finca Los Naranjos is located in the eponymous canton, within the province of Sonsonate.   This area offers a wide variety of microclimates adaptable to different varieties.    The farm benefits from soil rich in volcanic minerals thanks to the proximity of the Santa Ana volcano.   The organic matter and richness of the soil are provided by the canopy of trees located in the middle of the two hills "Pilón" and "El Águila", which also provides the shade necessary for the proper development of the coffee trees.    Trees are also planted throughout the farm to provide additional shade, and soil samples are taken regularly to ensure its composition and nutrients.    Yields are around 25 bags of green coffee per manzana (or 0.66Ha plot).    N.m - Producer Finca Los Naranjos is the story of three men: Sigredo, David and Manuel.   Nothing destined them for the management of coffee farms, but the acquisition of a micro-farm (La Fabiola) by David for his weekends, and the advice of Sigredo for the first harvests decided them to launch into another scale, then joined by Manuel for Finca Los Naranjos.    The Los Naranjos farm now employs 45 workers year-round, and up to 115 at the peak of the harvest.   The property follows the principles of the RENACER school by applying the teachings of producers throughout the region, which combines regenerative agriculture, yield management and grain quality.   Training is also provided to small and medium-sized local farmers, according to these 4 principles: the right product, at the right dose, in the right place and at the right time.    N.f - Varieties The 22 manzanas of Los Naranjos produce Catimor, Pacamara, Geisha, Pacas and Bourbon.    This coffee is made only from Bourbon Rouge, a variety susceptible to disease, but sublimated at high altitude and rich in aromas.    N.m - Treatment process This is the honey process (or semi-washed method): the coffee cherries are more or less pulped, then left to dry directly.   The quantity of pulp left on the grain will precisely define the type of method: black honey, red honey, yellow honey and white honey.   The darker the method, the more pulp we will have left and we will get closer to a natural coffee, and vice versa.    In our case, the coffee is harvested at the Los Naranjos farm and is then transported to the washing station next door.   An initial sorting is carried out to ensure the quality of the harvest (uniformity and maturity).   Then the coffee is washed and pulped, leaving as much mucilage as possible, which classifies it as red honey.
