L'Escoupit, means "splash" in Gascon: this cuvée represents a mosaic of the best micro-plots scattered throughout the property. This is the great cuvée: ample, round and traditional with its purely Médoc aging (30% new wood). TECHNICAL SHEET 2019 - AB conversion Parcel selection Superficial clay-limestone soils Mechanical Harvest Vinification: De-stemming and crushing followed by pre-fermentation maceration for 3 days. Fermentation 7 days at 27°C. 2 daily pumping over. Duration of vatting 21 days Aged 12 months in French oak barrels (1/3 new, 1/3 one wine, 1/3 two wines) Aging: 20 years Grapes: Cabernet Sauvignon 45%, Merlot 55% VAT: 14% vol
