Vinegar made from fortified Pedro Ximenez grape wines from the Montilla Moriles region. Once the wine is acidified, it is stored in oak barrels for a minimum period of 20 years using the Solera system. It is an amber-colored vinegar, similar to a brandy, with aromas of wood and toast.
