Organic red wine Old Carignan IGP Hérault 100% Carignan 2020

An old variety so decried and today so precious. The first aromas that mark the tasting are a pleasant bouquet of fresh fruit, black berries (blueberries, blackberries), blackcurrant candy, spices (vanilla) and beeswax. The nose is elegant, racy and evolves rapidly. Each waltz in the glass brings it ever more finesse and complexity. The mouth is consistent with the first contact: the fruit is expressed with accuracy and the aging envelops the whole. The tasting is underpinned by a minerality and a homogeneous freshness which are felt like background music. The tannins are supple, velvety while having the rusticity and typicality of Carignan. The structure is frank with a good hold, a pleasant balance between the aromas, the tannins and the heat, each dosed with the right measure. At the end of the mouth, you will feel all the richness of this wine whose flavors linger for a few seconds after having swallowed this beverage. The palate expresses the delicacy of a very ripe Carignan produced on my terroir, which is so qualitative and original. Freshness is the hallmark of this grape variety. A carafe before serving or opening the bottle at least 30 minutes before consumption will be useful.
